Keeping the knee "in place"?

Ever since I was a child, I used to "click" my knees. I could dislocate them, especially my right one, at will--to the horror of my parents. I've also been slightly pigeon-toed all my life, but try to fix it whenever I notice it.

I have tried a number of diets where I lost significant amounts of weight, but I never did sports or weight-lifting and I kept regaining the weight after a year or so. After years of being a lazy idiot, I tried my hand at rowing around two years ago but never got past the 6-month mark due to a little accident that left me with extreme pain in my right knee, which was apparently due to a parameniscal cyst (whatever that means). Flash forward to today, and I am largely sedentary and obese (6'2", 280 lbs) except for a few walks per week (~6-7 km), which I noticed particularly inflame my right knee. Whenever I walk I feel like it is quickly popping in and out of place with each step, which I try to avoid by tightening my legs. Also, whenever I sleep on my right side, I notice that my right knee feels like it falls off (it's hard to describe), and that I have to tighten my muscle or bend my knee to put it back in place. When I sleep on my left side, the problem is not as apparent, as if my right knee is already in place I guess.

These days, I have been waking up with a lot of pain in the right knee because I'm presumably sleeping on my right side during the night. My question is, why is this happening? Not sure if this helps, but I noticed that when I stop eating dairy food, my knees calm down for some reason, and I have more energy. Is there some sort of device or strap that can keep my knee in place?
